If they're locked in coffins and only crawl out when you pass a threshold, maybe the players can learn to rig up traps or seal the coffins. If the fight is just six skeletons standing in the middle of a room, there's less opportunity to innovation. Players would need to learn enough each time to feel like they were able to make a new plan, and have a situation which allowed for such plans. To mitigate this, you'd have to use careful enemy and encounter design to make each repetition of a fight meaningfully different. In a ttrpg, if I roll poorly and die to a bunch of skeletons, I'm not exactly thrilled by the prospect of trying the fight again, but this time hoping to roll well. Dying to some skeletons means that you messed up - time to learn where they're standing, work on your attack timing, and so on. In dark souls, you can learn a fight by playing it multiple times, and the actual process of fighting is inherently tactile and fun. The issue you'd encounter would be that ttrpgs don't reward or test the same skills as a video game. I have run a scenario where players had infinite respawns and had to use lethal trial-and-error to progress, which is a similar concept. I used bonfires (essentially) in a 5e campaign I ran, but only with regards to limiting where players could long rest, not resurrections.
